I created two exclusive bars for 37 Chocolates: a single varietal chocolate bar made with Piura Blanco cacao beans from Peru, as well as a copoazú bar.

Copoazú or cupuaçu (Theobroma grandiflorum) belongs to the Theobroma genus. I like to say it is a cousin of cacao. When its seed is blended with cocoa butter and sugar, it creates a product reminiscent to chocolate, with a creamier texture and very surprising notes of toffee.

During this 90-minute tasting, you’ll learn what makes these bars special to us and their importance in conservation efforts.
