When I visit cacao farms in search of rare cacao, my journey begins with the fruit itself. I smell and taste the delicous pulp of each variety growing on the land, because that is where the true flavor potential lies. During fermentation, the fruit’s vibrant essence infuses into the seeds, shaping the complexity of the final chocolate. This white chocolate infused with Peruvian, Piura Blanco cacao pulp brings the farm to you in a chocolate bar that tastes just like the pulp of the rare Piura Blanco cacao, notorious for its high percentage of white cacao seeds.
