In 2019, Denise was invited to Peru to represent U.S. chocolate makers at the Cacao and Chocolate Salon in Lima. She learned about an interesting mix of native cacao from the northern coastal desert region of Piura. Typically, cacao is native to the rainforest, but this cacao has adapted to the dry, arid environment at the lowest point of the Andes where the Amazon meets the desert coast. Knowing that a drier climate imparts nice flavors in cacao and fewer tannins, Denise wanted to make a chocolate out of this variety for you to taste.
