After six years, I returned to the Cacao and Chocolate Salon in Lima, Peru,
on a mission: to find the most extraordinary cacao for you. I tasted my way through countless origins, but one stood out - a rare heirloom cacao from the Piura Valley, known for its white seeds and low tannins.
The cacao is unlike any other. It is the only variety that thrives in the desert climate, where the dry conditions concentrate its fruity flavors. When I tasted its cacao pulp it was so delicate, creamy and mild. Roasting this cacao requires precision. I’ve developed a technique that balances its natural citric acidity, reminiscent of starfruit, with a soft nuttiness of almond.
This careful approach allows me to use less sugar, creating a chocolate that’s both healthier and bitter-free.
