Denise discovered Theobroma bicolor when she visited Chazuta in the Amazon of Peru. It is in the same family as cacao and has many names: In Peru it is macambo. In Mexico it is pataxte, but informally called “jaguar cacao”. It is wild harvested from the Amazon with flavors of hazelnut and macadamia and a soft crunch. Denise purchased jaguar cacao directly from a widowed womens’ chocolate cooperative in Chazuta. With the help of USAID, their community reclaimed peace from the threat of armed conflict. We sprinkle the jaguar cacao nibs onto our Arhuacos 68% dark chocolate as a symbol of hope. Also, victims of conflict, the Arhuacos reclaimed their spiritual land after fifty years of isolation at higher altitudes.
