Our Bean-to-Bar Story

Do you love chocolate? We do too...but have you ever experienced fine flavor chocolate?

We handcraft chocolate from bean to bar in small batches at our factory in Stuart, FL. We preserve extraordinary flavor notes which are native to each cacao variety, geographic origin and bean preparation. By crafting chocolate in small batches, we take exquisite care to bring out the variety of delicious flavors that exist in fine flavor chocolate.

Much like grapes and wine production, fine flavor cocoa beans from different origins have unique flavor profiles that can change with each harvest, fermentation and roasting profile. We started Castronovo Chocolate as a journey to discover the diversity of flavors in chocolate. We hope to share this discovery with you through our single-estate or single-origin chocolate bars and products.

While we raise your expectations for chocolate, we aim to create a market for fine quality cacao, which accounts for an ever diminishing percentage of the world’s overall cacao production – roughly 5%. Numbers of fine flavor cacao trees have severely declined due to disease, environmental change, poor quality hybrids, and competition from other crops that reap higher profits with less labor. By creating a market for American-craft fine flavor chocolate, we hope to raise the standard of living for Latin American farmers by pursuing direct trade relationships and sharing our expertise to help them gain the most financial benefit from their cacao crop. Together we can raise the bar for chocolate and its sustainable production.

Our factory and tasting room is open to the public at 555 Colorado Ave in Stuart, FL in late July. Come visit us to see how chocolate is made from bean to bar in a week-long process. We're open Monday through Friday from 10 AM to 5 PM and 10 AM to 3 PM on Saturday.
