Introducing Castronovo's Signature Collection, we searched the globe for cocoa beans with extraordinary fine flavor to create our top-shelf Signature line of chocolate. Recent discoveries have found that Criollo varieties of cacao have their origins in Nicaragua in addition to the Upper Amazon basin. As a result, Nicaragua is quickly becoming a hotbed for the world's finest-flavored cacao. We carefully chose the Nicalizo heirloom cacao variety for our Signature Collection. We are enamored by its flavor complexity. The chocolate has fruit flavors of plum, cherry with rich buttery notes of toasted toffee, a little spice of pink peppercorn, and a lovely roasted walnut long-lasting finish. This truly is a special chocolate.
