Last fall at the Salon du Chocolat in Paris, I met Charles, an ecologist like myself who founded Zorzal Cacao. Within a private reserve of mountainous rainforest in the Duarte province, Charles is demonstrating that organic cacao production can serve as an economic model to finance biodiversity conservation for birds and other wildlife. The Zorzal reserve serves as a winter home for several migratory birds that fly from northeastern coniferous mountain forests to the rainforest of the Dominican Republic, including the threatened Bicknell thrush (Zorzal in Spanish) for which the reserve is named after.
